    A STUDY ON PHYSICOCHEICAL PROPERTIES OF CHINESE BUFFALO MILK

    • The physical properties and chemical composition of Chinese buffalo milk were determined,and the physicochemical properties of milk from the Chinese buffalo,Murrah buffalo,and dairy cattle were compared and analysed in this study.Theresults showed that total solid,fat and protein contents of Chinese buffalo milkwere considerablely higher than those of Murrah buffalo and dairy cattle milk;non-fat solid and calcium contents of Chinese buffalo milk were higher thanthose of cattle milk,but the water content was lower.Therewere no significantdifference in other chemical composition and physicai properties among thethree kinds of milk.
