    葡萄糖氧化酶-过氧化氢酶复合体系提纯异麦芽低聚糖的研究

    Studies on purifying isomalto-oligosaccharide by combined enzyme of glucose oxidase and catalase

    • 摘要: 以葡萄糖氧化酶(GOD)和过氧化氢酶(CAT)协同作用提纯商品异麦芽低聚糖,并采用均匀设计法结合单因素试验确定了最佳工艺条件:当温度40℃,pH4.0,底物质量浓度200g/L,GOD的用量100U/g,CAT与GOD的酶活力比为15时,其中的葡萄糖被完全除去,异麦芽低聚糖的纯度由62.78%提高到85.28%.
